Ingredients
- 3 mandarins
- 1 cup oil
- 4 eggs
- 1 cup raw sugar
- 4 cups plain flour sifted
- 125 g almond meal
- 2 tsp bicarbonate of soda
- 1 tsp salt
- 1 tbs milk

Instructions
- Simmer whole mandarins, covered with water, until soft.
- Puree whole mandarins in food processor or blender.
- Place in large bowl, add remaining ingredients.
- Mix until well blended. Add small amount of milk or fruit juice if mixture is a bit stiff. It should be loose without being too wet.
- Pour into a 33 cm x 27 cm greased and lined baking dish or two large loaf pans.
- Bake at 180C for approximately 50 - 60 minutes. Cake is cooked when sides shrink from pan and skewer comes out of middle clean.
- Allow to cool before turning out of pan. Can be left plain or iced with cream cheese icing.
