Ingredients
- 500 g beef mice
- 1 onion finely diced
- 2 cloves garliccrushed
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- tablespoon idijon mustard
- 2 teaspoons salt flakes
- 1 teaspoon freshly cracked black pepper
To serve:
- 8 slices colby cheese
- 1 red onion finely sliced
- whole pickled cucumbers/gherkins sliced lengthways
- American mustard
- Tomato ketchup
- Cos lettuce leaves
- 4 burger buns - lightly toasted on the cut side

Instructions
- To make the burgers:
- Mix all ingredients together in large bowl until well combined.
- Divide mixture into 5 equal portions and roll each into a ball. Press to form a round burger patties about 2cm thick, and place a on a tray with grease proof paper, cover with cling wrap and place in a fridge for an hour, or until you are ready to cook.
- Remove the burgers from the fridge 30 minutes before you are ready to cook.
- Heat a large fry pan over a medium high heat for 2 minutes.
- Drizzle some oil over the burger patties and place oil side down on the pan. Cook for 2 minutes on each side for medium or until your liking. Just before removing the burgers, place one slice of cheese on each of the patties and remove the pan from the heat. Cover pan with foil so the cheese melts slight into the burger.
- To assemble, spoon some American mustard and ketchup on each side of the buns. Then add a slice of cheese, the burger patties (cheese side up) then top with sliced onion, pickle, lettuce and the top bun.
